<span style="font-family: Arial, Helvetica, sans-serif;">We've already celebrated a little. Last weekend Rocket Man got me tickets to see Wicked for my birthday! It was the last night in town and it was WONDERFUL. I've been obsessively listening to the Wicked Pandora station all week and singing along. I loved how the show was all about "good" and misunderstandings. It really puts a new perspective on how I've been looking at some things lately. </span><br />
<span style="font-family: Arial, Helvetica, sans-serif;"><br /></span>
<span style="font-family: Arial, Helvetica, sans-serif;">This week will be hectic! Not only will I turn 29 (for real?!?!), but I'm also headed to Chicago for a work event. We have a meeting with some of out top leaders for the Eastern part of the country and I'm headed there as support. Unfortunately, I fly out on my birthday. :( So I won't get to spend any time with Rocket Man, my family, friends, etc. on my "special day." But, I will get to hang out with my brother on Sunday after our meetings end. I booked a late flight and will get to spend most of the day hanging out with Rick! I'm preparing for stinkin' coooold weather, too. Windy City, here I come!</span><br />

<span style="font-family: Arial, Helvetica, sans-serif; font-size: x-small;">With the new year quietly creeping along, I thought I'd share with you my 13 "resolutions" for 2013. I usually don't make resolutions so this year I was excited to do so! </span><br />
<ol>
<li><span style="font-family: Arial, Helvetica, sans-serif; font-size: x-small;">Begin to set aside money to play. I'll start at $50 each month and go from there. Once I've done this for 6 months or a year, I will do something wonderfully splendid! I'll take a cruise or buy a plane ticket or something. It won't be much, but it will be something. And I will have planned it! </span></li>
<li><span style="font-family: Arial, Helvetica, sans-serif; font-size: x-small;">Experiment more in the kitchen. I usually fall into the same-'ol-same-'ol and it's boring! So, for breakfast the other day, I made poached eggs! Not the craziest thing out there, but it's something I've never done that I've always wanted to do! I need work, but I'll get there! </span></li>
<li><span style="font-family: Arial, Helvetica, sans-serif; font-size: x-small;">Find my decorating style! I've been in my new house for 7 months now. I need to decide on paint colors and a style that I like. And I need to commit to it!</span></li>
<li><span style="font-family: Arial, Helvetica, sans-serif; font-size: x-small;">Join a gym with a pool. While in Arizona over Christmas, I went with Rocket Man's niece and nephew to their swim practice a couple times. While I was a swimmer, I was never a medal-winning swimmer. But, I liked it. And watching them swim, I missed it. I'll start this again and get myself healthier. </span></li>
<li><span style="font-family: Arial, Helvetica, sans-serif; font-size: x-small;">Remember/relearn all that I learned in my college photo class. Rocket Man's Christmas gift this year was a beautiful/amazing/wonderful Canon DSLR. I'm in love with this camera. So, I will find places to use this and I will remember everything I learned. I will also need to invest in an external hard drive to store all my images. </span></li>
<li><span style="font-family: Arial, Helvetica, sans-serif; font-size: x-small;">Be a duck. A what? A duck. Meaning, I won't let myself sit and stew over things people have said or done. I will ask myself "will this matter in 5 days, months, years?" and if it won't, I will move on! </span></li>
<li><span style="font-family: Arial, Helvetica, sans-serif; font-size: x-small;">Keep my house cleaner. The faster I type this list, the sooner my floors will get some attention. Two black labs and one long and fluffy haired cat make quite a mess!</span></li>
<li><span style="font-family: Arial, Helvetica, sans-serif; font-size: x-small;">Show Rocket Man what he means to me. Sometimes I take him fore granted and I don't want him to feel that way. </span></li>
<li><span style="font-family: Arial, Helvetica, sans-serif; font-size: x-small;">Make less impulse buys. This links back to #1. When I successfully do not impulse buy, I will keep track of the amount I've saved and add that to my play savings. </span></li>
<li><span style="font-family: Arial, Helvetica, sans-serif; font-size: x-small;">Spread the "Tupperword." If you start to see a monthly email from yours truly, read through and check it out! It will include the monthly specials that I may have handpicked! If you buy tons, maybe I'll get a promotion!! </span></li>
<li><span style="font-family: Arial, Helvetica, sans-serif; font-size: x-small;">Continue to learn Spanish. I have Rosetta Stone from my company. I will make a more concerted effort to study. </span></li>
<li><span style="font-family: Arial, Helvetica, sans-serif; font-size: x-small;">Mail people their cards, gifts, etc. I call my guest bedroom the gift graveyard. I have SOOOO many cards and gifts that have been purchased with good intentions and then they waste away because I don't go to the post office. </span></li>
<li><span style="font-family: Arial, Helvetica, sans-serif; font-size: x-small;">Find/Create more time to spend with the girls. I've changed a lot in the past year and I've moved a little away from my girls. Making a renewed connection with those ladies will be a point I choose to make this year. </span></li>

<li><span style="font-family: Arial, Helvetica, sans-serif;">Trip to Tally to see my brother graduate from FSU!! He moved up to Chicago and is settling in nicely. </span></li>
<li><span style="font-family: Arial, Helvetica, sans-serif;">Trip to Disney World and Disneyland for work. Very long, very exhausting. </span></li>
<li><span style="font-family: Arial, Helvetica, sans-serif;">We got another dog! By we, I mean Rocket Man. But, I'm calling her 'ours' because he already has 'his' dog Shadow and I want in on the fun. Mandy is a 4-yr old black lab who is the sweetest thing ever. She needs a little work on the house training, but other than that she's been a dream dog. She stays at Rocket Man's house during the week, so I miss her (and of course Shadow and Rocket Man). </span></li>
<li><span style="font-family: Arial, Helvetica, sans-serif;">Lots and varying home projects. This weekend included the purchase of a new faucet for my bathroom and two unfinished Adirondack chairs that I started staining and can't wait to put together!</span></li>

But, I added a little bit extra to bring the yellow cake/chocolate frosting combination to life. STRAWBERRY FILLING!! In-between those two fluffy yellow layers was a sweet, fresh and delicious layer of strawberries. We loved it! Grandma, Aunt T, Mom and Mike all enjoyed a slice. I could have continued eating, but I had to get home to finish my cake masterpiece for tonight! </span><br />

<span style="font-family: Arial, Helvetica, sans-serif;">Tonight's cake is blowing my mind. Really. I don't think I've ever done something I'm so excited about. It's a Lemon Layer Cake (recipe from the March 2012 <a href="http://www.saveur.com/">Saveur mag</a>). Hello, delish. I made this one from scratch. And I've discovered why all my previous cake adventures have failed - grease AND flour the pan. Oh, and I also discovered the wonders of using cake flour - it's finer, it's fluffier, it's better. I made the layers last night and am finishing the lemon curd frosting today. I can't wait to eat this. I found this...<a href="http://www.msapplescrabshack.com/">Ms. Apple's Crab Shack</a>. I immediately asked Rocket Man if we could try this out sometime. He was so excited that we decided to have a little seafood boil that night! </span><br />

I have always gagged (and I don't mean just turned up my nose, I mean GAGGED) when those peas came my way. I managed to stomach one black eyed pea just to go with tradition. Ew. <span class="Apple-style-span" style="font-family: Arial, sans-serif;">This year - I'm bucking traditions! No more gagging. I had a hankerin' for some pierogies and a really yummy roasted chicken. And I wanted to spend some time cooking.</span><br />

<span class="Apple-style-span" style="font-family: Arial, Helvetica, sans-serif;">Rocket Man introduced me to pierogies of the frozen variety. I thought I could make them better and tastier - from scratch. Why not try? I also love to make a yummy roasted chicken - herbs, lemon, garlic, carrots, etc. Makes my stomach warm and my heart happy. Success! I can't wait to try making this dinner or a variation again!! Maybe salmon or steak as the meat next time? </span><br />

<ul>
<li><span class="Apple-style-span" style="font-family: Arial, sans-serif;">2 cups flour, plus more for rolling dough</span></li>
<li><span class="Apple-style-span" style="font-family: Arial, sans-serif;">1/2 teaspoon salt</span></li>
<li><span class="Apple-style-span" style="font-family: Arial, sans-serif;">1 large egg</span></li>
<li><span class="Apple-style-span" style="font-family: Arial, sans-serif;">1/2 cup sour cream</span></li>
<li><span class="Apple-style-span" style="font-family: Arial, sans-serif;">1/4 cup butter, softened and cut into small pieces</span></li>
<li><span class="Apple-style-span" style="font-family: Arial, sans-serif;">Filling of your choice- Loaded Potato Filling recipe below</span></li>
<li><span class="Apple-style-span" style="font-family: Arial, sans-serif;">Egg wash for sealing </span></li>
<li><span class="Apple-style-span" style="font-family: Arial, sans-serif;">Olive Oil for sauteing</span></li>

<span class="Apple-style-span" style="font-family: Arial, sans-serif;">Mix together flour and salt in medium bowl. In a small bowl beat the egg and add it to flour mixture. Mix in butter and sour cream and combine well until the dough is no longer sticky. I mixed this by hand with no problem - using my hands to really get the consistency I wanted. Form a ball with the dough, wrap in plastic and refrigerate for at least 30 minutes to overnight. Refrigerate for a maximum of 2 days. I could only wait 30 minutes. I was too excited. Okay, maybe 29 minutes.</span><br />
<span class="Apple-style-span" style="font-family: Arial, sans-serif;"><br /></span><br />
<u><span class="Apple-style-span" style="font-family: Arial, sans-serif;">Filling</span></u><br />
<ul>
<li><span class="Apple-style-span" style="font-family: Arial, sans-serif;">8 to 10 petite red potatoes (leave the skin - it adds flavor!)</span></li>
<li><span class="Apple-style-span" style="font-family: Arial, sans-serif;">3 to 4 cloves garlic (whole and peeled)</span></li>
<li><span class="Apple-style-span" style="font-family: Arial, sans-serif;">1/4 cup cold milk</span></li>
<li><span class="Apple-style-span" style="font-family: Arial, sans-serif;">1/4 cup sour cream </span></li>
<li><span class="Apple-style-span" style="font-family: Arial, sans-serif;">1/8 cup butter</span></li>
<li><span class="Apple-style-span" style="font-family: Arial, sans-serif;">1 package of bacon bit (I cheated... but they were real bacon!)</span></li>
<li><span class="Apple-style-span" style="font-family: Arial, sans-serif;">Shredded cheddar cheese</span></li>
<li><span class="Apple-style-span" style="font-family: Arial, sans-serif;">Salt and Pepper to taste</span></li>
</ul>

<span class="Apple-style-span" style="font-family: Arial, sans-serif;">Wash and then boil potatoes with whole garlic cloves until tender. Remove from heat and drain. Add in milk, sour cream, bacon, butter, cheese. Mash until creamy and season with salt and pepper as desired. You may wish to add more milk or sour cream to achieve correct consistency. This made a large batch - set it aside to eat later in the week. Who doesn't love some comfort food during a hectic week?</span><br />
<span class="Apple-style-span" style="font-family: Arial, sans-serif;"><br /></span><br />
<u><span class="Apple-style-span" style="font-family: Arial, sans-serif;">Assemble </span></u><br />
<span class="Apple-style-span" style="font-family: Arial, sans-serif;">Roll out dough between two pieces of plastic wrap until 1/16" thick. Cut circles of dough using a circle cookie cutter, biscuit cutter, or drinking glass. I used a Tupperware dumpling maker, and it gave me good sized pierogi. Place a tablespoon of filling (or less, depending on the size of your dough) on each circle, brush edges with egg wash and fold dough over to create a semi-circle. Press edges of dough together using a fork, and a bit more of egg wash to really stick. </span><br />
<span class="Apple-style-span" style="font-family: Arial, sans-serif;"><br /></span><br />
<u><span class="Apple-style-span" style="font-family: Arial, sans-serif;">Cook</span></u><br />
<span class="Apple-style-span" style="font-family: Arial, sans-serif;">Boil a large pot of water. When at a full boil, drop in a handful of pierogi at a time. Boil for 7-8 minutes. Watch for pierogi to float and then remove from water and pat dry. Repeat with desired amount of pierogi as you make room removing each finished piece. In a large skillet heat olive oil over medium heat. Add pierogi in a single layer, and turn when nicely browned and crispy.</span><br />
<span class="Apple-style-span" style="font-family: Arial, sans-serif;"><br /></span><br />
<span class="Apple-style-span" style="font-family: Arial, sans-serif;"><br /></span><br />
<span class="Apple-style-span" style="font-family: Arial, sans-serif;">To tell you the truth, I was a little scared as I went to make these - they seemed so involved. They weren't. They were time consuming. And took a little patience. But they turned out really, really tasty. Rocket Man loved them. He loved my chicken, too. These cookies are legit. Rocket Man is a huge Gator fan and wanted to make a run down to the local produce/salsa store. On the way there we were talking about what to do for the game and if we wanted to go grab wings at the sports bar. Since I'm on a new workout kick thanks to my fun co-workers, I'm trying not to eat fried food (my candy). So, I suggested we just run to the grocery and buy a bag of frozen wings and I'll make some "heathier" wings? I can even make a delicious blue cheese dip (not healthier, though). He sounded hesitant but agreed. And off we went. </span><br />

<span class="Apple-style-span" style="font-family: Arial, Helvetica, sans-serif;">We got home and I started defrosting the wings while I made our blue cheese dip. The boys were playing around with changing the oil in the cars and the dog was following me around like he was lost. I gave up for a few and watched the Florida State game. </span><br />

<span class="Apple-style-span" style="font-family: Arial, Helvetica, sans-serif;">Soon after the oil was changed and the dog was happy and the Seminoles beat the Wolfpack, Rocket Man decided to take one of the bags of wings (we'd bought two) and grill his own wings (with a little nudging from yours truly). </span><br />

Then throw in the blue cheese and green onions. Mix it up and add in the vinegar. Mix again. Adjust the sour cream and mayo to your liking. </span></div>

<li><span class="Apple-style-span" style="font-family: Arial, Helvetica, sans-serif;">Pull these babies out of the fridge. Turn your oven on to broil and move the rack down to the second to lowest rung (but not the lowest). Line the wings up on a pan (preferably one with sides). </span></li>
<li><span class="Apple-style-span" style="font-family: Arial, Helvetica, sans-serif;">Broil the wings for 6 minutes on the first side. Pull them out and turn them over. Broil for another 5-6 minutes or until they are nice and crispy. Take 'em out and put on a plate. </span></li>
<li><span class="Apple-style-span" style="font-family: Arial, Helvetica, sans-serif;">Take more of that Franks Hot Sauce and drizzle it over the wings to your satisfaction. </span></li>
<li><span class="Apple-style-span" style="font-family: Arial, Helvetica, sans-serif;">Eat. Put some of the blue cheese dip on the wings. Eat more. </span></li>

So we decided to take a trip to Publix because we thought it would be great to make chili. </span><br />
